Welcome to Chuckwagon…

Chuckwagon Nutcakes features hand-crafted artisan cakes with the finest ingredients from as many Texas sources as possible. Our cakes are naturally gluten-free as we don’t use flour and are densely packed with versions of chocolate, chile, dried fruits and nuts. Sandi Wilson, the owner and creator of Chuckwagon Nutcakes, developed delicious recipes bursting with unique flavor combinations and the satisfying elements of sweet n’ heat, moist and chewy, rich and chocolatey.

About Us

All good ideas are sparked from a catalyst that sets one to imagining what else could be. For me that catalyst was my mother making her traditional fruitcake each year for gifts. I decided to create unique flavor profiles of the flourless cake idea using chocolate, toffee, various fruits and spices. Chuckwagon Nutcakes was born out of that tradition, echoing our cowboy/rancher heritage and honoring the history for the cattle drive and enduring saddlepack fare.

Our Company

Sometimes it takes all hands on deck in a commercial kitchen. Here you see my husband, Charles Wilson an Ex Pro Rodeo hand, lending me a hand with the cakes. I started out in my kitchen making Chuckwagon Nutcakes and doing local shows to introduce my new product. As the business grew, we began producing cakes in a commerical kitchen and taking the business to Food and Wine Shows all over Texas. Currently we are featured in a local store in Fort Worth, TX, The Table Market, with the goal of gaining access to larger stores in the future. Chuckwagon Nutcakes values a job well done and will always endeavor to produce a high quality product that will make you want more at the first bite. Here’s to all the cowboys willing to get in the kitchen with their wives!

My history of creative pursuit has led me down many entreprenural roads in life. Being a consummate designer of all good ideas I have lent my talents to the interior design field, to music as a pianist, singer, and songwriter, to producing special events and to writing books. It is all about the creative process for me! My long journey in the culinary world is self- taught where I consistently step out of my comfort zone to try new challenging techniques in cooking and even to create my own recipes. Coming from my past as a child where I joined in family cattle round ups, I have always loved my western heritage. Coupling that heritage with culinary expertise I wanted to produce something that had history, was exceptional in texture and flavor and something that no one else was doing. The chuckwagons of the old cattle trail days always carried dried fruit and nuts to make hand held pies for the cowboys. Chuckwagon Nutcakes is my newest offering of the best of both worlds where history and taste collide.
